Hard Cider Pulled Pork Sandwiches

Everyone needs an easy weeknight meal that they can count on. A meal with few ingredients, little prep time and a lot of flavors.

Whenever I know I am working late for an event, I always try to put something in the slow cooker so that I do not have to think about dinner after I get home. I need a meal that is just about ready to go when I open the lid.

 

The great thing about this recipe is that you can use the pulled pork for tacos, enchiladas, salads, pasta dishes and so many other meals, not just sandwiches.

Hard cider is frequently in our refrigerator. It is just sweet enough, slightly dry and bubbly, and this cider from New Day Meadery in Fountain Square is a “crisp hard apple cider slightly sweetened with honey and has notes of fresh apple and a creamy finish.” The honey pairs well with the pork and offer a bath for the pork to cook in, keeping it moist. Some of the sweetness cooks off, allowing the pork to become a savory protein any meal.

I think I like this more than I like cooking it in beer. Maybe because it is so hot and humid outside that the thought of adding this crisp, refreshing drink to my dinner makes my mouth water.

Hard Cider Pulled Pork Sandwiches

Ingredients:

  • 1 3-lb pork butt or pork shoulder
  • 1 16 or 22-ounce hard cider (I used New Day Meadery’s South Cider)
  • Baguette or bread rolls
  • Thinly sliced provolone cheese
  • BBQ sauce of your choice (I used Stubb’s Hickory Bourbon)

Direction

  1. Place the pork in a slow cooker and pour hard cider on top. Cook on low for 8 hours.
  2. Remove the pork from the slow cooker into a bowl and shred. You can either mix in the BBQ sauce or serve it on the side.
  3. Slice the baguette or rolls in half.
  4. Place the slices of provolone on the bread and top with shredded pork. Serve and enjoy!
